You think Korean food means samgyeopsal and fried chicken? That's the tourist menu. The real Korean food — the kind that Korea's true gourmets and VIPs quietly disappear to enjoy — goes by another name: Hanjeongsik. This is a premium traditional feast, evolved directly from the royal court cuisine once reserved for Korean kings.
What Is Hanjeongsik? Korea's Ultimate Fine Dining Experience
Restaurants serve Hanjeongsik in one of two ways. Some lay out every dish at once on a massive table. Others serve it course by course, like a French tasting menu. The place I visited today does something smarter — it combines both. First, a dazzling course-by-course sequence wakes up your palate. Then, just when you think dinner is over, an entirely new main spread appears, as if the meal is starting from scratch.
Phase One: The Opening Act That Wakes Up Your Palate
The moment you sit down, the chef begins sending out a procession of appetizers — and there's a science to the order in which they arrive.
Black Sesame Porridge
A warm porridge made from black sesame seeds. This nutty, comforting dish coats your stomach and primes it for what's coming.
Mango Purée Tomato Salad
An unexpected pairing. The sauce opens with the refreshing, tangy, and cold radish-infused broth flavor of traditional Dongchimi (Korean water kimchi), then finishes with a sweet mango note — a perfect match with fresh tomato.
Mushroom Meatballs
The chef cooks the mushrooms to a jelly-like tenderness, so the dense richness of the meatball collides beautifully with the mushroom's unique bounce.
Chilled Chicken Salad
A sharp, tingling mustard sauce meets lean, delicate chicken breast. This sour, bold jolt detonates your appetite instantly.
Phase Two: The Chef's Skills Take Over the Table
Now the meal shifts into its second act. Premium ingredients start dominating the table.
Steamed Prawns with Vegetables
Enormous shrimp, soaked in a seasoned vegetable broth. Every bite bursts with deep ocean flavor and vegetable sweetness.
Yukjeon (Pan-Fried Battered Beef Slices)
One of my favorite Korean dishes, hands down. At the truly high-end places, a staff member grills the beef tableside, right next to you — because beef must be seared lightly to stay tender. Wait too long, and the meat leaks blood and loses its edge, which is why most restaurants that pre-cook it tend to overdo it. This place erred slightly on the well-done side too, but the tangy perilla leaf salad served alongside rescued it completely.
Stonecrop Salad and Tteokgalbi (Korean Minced Beef Steak)
Similar to a Salisbury steak, Tteokgalbi is juicy minced short rib grilled in a sweet glaze, paired with Sedum (a crunchy, hydrating fresh Korean wild herb) — the freshness instantly cuts through the richness.
Braised Abalone
Cooked in a special soy-based sauce. Think of it as a lighter, less salty cousin of traditional jeonbok-jang (soy-marinated abalone). Cooked abalone reaches peak tenderness and luxury texture.
Phase Three: The Real Feast Begins When You're Already Full
By now, you'll feel stuffed. Don't put your spoon down yet — the true main event hasn't even started. A staff member returns and builds an entirely new, massive main spread — what's called a Hansang (a full, multi-dish table presentation) — filling every inch of your table.
The Main Spread: Boribulbi, Braised Short Ribs, and More
This is where the meal reaches peak spectacle. Salty Boribulbi (dried yellow corvina, aka "rice thief" for how addictively it pairs with rice), spicy stir-fried octopus, sweet and tender braised short ribs, and crispy grilled bulgogi all hit the table at once. Add a hearty doenjang stew (fermented soybean paste soup) and dozens of meticulously prepared banchan (side dishes), and your stomach — even at its limit — will find room for one more bowl of rice, pulled in by sheer umami force. I cleared every single plate.
Dessert: Omija, Korea's Five-Flavor Berry Drink
Dessert is a specialty drink made from omija, a traditional Korean five-flavor berry. Its sweet-and-sour complexity works like magic, wiping your palate clean after all that richness.
